This is my mother and uncle in Nara, Japan in 1971. My grandpa has been studying Japanese history for years (he’s now a semi-retired professor at Indiana University Bloomington) so their whole family lived in Japan for about a year when my mom was six. The animal in the picture is one of the sacred deer which wander around the temples at Nara. They are very tame and you can pet them, although they tackle you like puppies if you have food (or loose paper, or a long skirt, like my grandma apparently wore that day). My mother later returned to Japan to study while she was in college. I went on a school trip to Japan in twelfth grade and went to Nara: I now have my own pictures with the deer. And I go to the same college my mother attended. I love feeling connected to my family history.

Forget crappy store-bought veggie burgers. These are delicious. I used about 1 cup of sweet potato with 1 cup of cooked quinoa and 1 egg, which made 4 small-ish patties. Scale up accordingly.

To cook quinoa, rinse well and then add 1 part quinoa to 1.5 parts water in a pot. Bring to a simmer, lower the heat, cover, and cook until water is absorbed (about 15 minutes). Almost every other quinoa recipe I see says 2 - 3 parts water and it’s why I hated quinoa for so long — it turns to mush! Less water will give you fluffy quinoa every time.
